According to this logs, the contents inside winmail.dat were extracted and winmail.dat was removed.

I was able to track the problem down to a certain degree, please read my question at the end... :think:

This post clamd@scan.service start operation timed out. Terminating had similar processor behavior than my server.
and cpu is going through the roof

Unexpectedly, all relay information stops updating on all messages.
I then restart milter_relay and postfix_relay services and they start working again for a few hours and then relay information ...
