Why im i seen messages with no from field?? what does that mean??

It means these messages don't have a From field in the header defined. Typical for many types of spam.

Is there a way to block any e-mail without a from or subject field present?

Treat Invalid Watermarks With No Sender as Spam = high-scoring spam
Be aware this is likely to also block sender receipts as I have observed many remote servers (such as Exchange) stripping the watermark from the header on response.
