I have a EFA 4 running on-site. I really like the features but we have migrated all of mail to Office365. What IP address do I use in Mail settings, Transport Settings so that incoming mail gets sent to Office 365?

I think you want to send emails to Office 365's SMTP relay so you may want to use the hostname instead of an IP
