In EFA configure under mail settings I set my postmaster alias to be a valid email address, however when the quarantine port is sent out the from address is postmaster@my_domain.com.
I went into them quarantine_report.php and hard coded the FROM address I wanted bypassing the variables.

Got the same issue here:
EFA has a hostname of EFA; Inside EFA_Configure => 4. IP Settings => Domain name is my internal domain: internal.domain.tld
I assumed this is correct as this is how the machine is reachable internally as efa.internal.domain.tld
BUT when emails are being released, they are released from postmaster@internal.domain.tld which then bounces back if I am releasing an email to an external sender.
@webguyz would you mind sharing your code changes so I can use that as a temporary solution please?
