I looked in /etc/cron.daily and ran the commands inside of freshclam. The definition update worked properly. I rebooted and mail started flowing again. Hope that helps you, too!

Same thing happened today to me as well. All mail just stopped being processed and after a reboot it hangs at Starting Clam AntiVirus Daemon forever. I was able to go ahead and SSH in, manually start mysql, postfix, and mailscanner but could not get mail to pass or figure out what's wrong.

Inbound sig sent to outbound mail
I've disabled outbound signatures and mail that is relayed out has no sig. However, if I relay a mail from the local network that contains both an internal and an external address (and is not sent from within the local exchange system), the external mail receives the internal sig.

You can also just delete the contents of the two files and not change any rules, that will also cause DKIM signing to work.
